Chicken Rub

• 4 tb Salt (I like sea or kosher salt) • 1 tb Cayenne pepper (I sometimes use Cajun Spice for Hotter) • 4 tb Light brown sugar • 1 tb Chili powder (good, New Mexican) • 1 tb Onion salt (sometimes leave this out, brining is salty enough • 1 tb Freshly Ground Black Pepper • 1 tb Sage • 1 tb White pepper • 1 tb Lemon pepper

Rib & Pork Rub

• 3/4 Cup Paprika • 1/4 Cup Ground Black Pepper • 1/4 Cup Salt • 1/4 Cup Sugar • 2 Tablespoons Garlic Powder • 2 Tablespoons Chili Powder • 2 Tablespoons Onion Powder • 2 Tablespoons Cayenne (increase if you want them ribs hotter)

Spice Rub for Pork & Beef

• Makes about 1 cup • 2 tablespoons paprika • 2 tablespoons chili powder • 1 to 2 teaspoons cayenne pepper • 2 tablespoons granulated garlic or garlic powder • 2 tablespoons light or dark brown sugar • 1 tablespoon ground cumin • 1 tablespoon dry mustard • 1 teaspoon ground sage • 1 teaspoon dried oregano • 1/4 cup salt • 1 tablespoon freshly ground black pepper
